These Tasty Maple Dijon Chicken & Sweet Potato Bowls are the perfect balance of sweet and savory. Juicy chicken and roasted sweet potatoes are tossed in a maple Dijon glaze and served as a wholesome, satisfying bowl meal.

  • 1 1/2 lb boneless, skinless chicken breasts or thighs
  • 2 large sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 3 tbsp pure maple syrup
  • 2 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 tsp dried thyme or rosemary
  • Salt and black pepper, to taste
  • Optional for serving: cooked rice or quinoa, steamed greens

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss cubed sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on the baking sheet.
  3. Roast sweet potatoes for 20 minutes.
  4. Meanwhile, whisk maple syrup, Dijon mustard, garlic, thyme, remaining olive oil, salt, and pepper in a small bowl.
  5. Add chicken to the baking sheet with sweet potatoes and brush generously with the maple Dijon sauce.
  6. Return to oven and roast 18–22 minutes, until chicken is cooked through (165°F / 74°C) and sweet potatoes are tender.
  7. Let rest 5 minutes, then slice chicken.
  8. Assemble bowls with sweet potatoes, chicken, and optional rice or greens. Drizzle with extra sauce if desired.

Notes

For extra flavor, add a splash of apple cider vinegar to the sauce. This recipe is great for meal prep and reheats well. Swap chicken for salmon if desired.
