These Tasty Maple Dijon Chicken & Sweet Potato Bowls are the perfect balance of sweet and savory. Juicy chicken and roasted sweet potatoes are tossed in a maple Dijon glaze and served as a wholesome, satisfying bowl meal.

- 1 1/2 lb boneless, skinless chicken breasts or thighs
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 3 tbsp pure maple syrup
- 2 tbsp Dijon mustard
- 2 cloves garlic, minced
- 1 tsp dried thyme or rosemary
- Salt and black pepper, to taste
- Optional for serving: cooked rice or quinoa, steamed greens

- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss cubed sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on the baking sheet.
- Roast sweet potatoes for 20 minutes.
- Meanwhile, whisk maple syrup, Dijon mustard, garlic, thyme, remaining olive oil, salt, and pepper in a small bowl.
- Add chicken to the baking sheet with sweet potatoes and brush generously with the maple Dijon sauce.
- Return to oven and roast 18–22 minutes, until chicken is cooked through (165°F / 74°C) and sweet potatoes are tender.
- Let rest 5 minutes, then slice chicken.
- Assemble bowls with sweet potatoes, chicken, and optional rice or greens. Drizzle with extra sauce if desired.
Notes
For extra flavor, add a splash of apple cider vinegar to the sauce. This recipe is great for meal prep and reheats well. Swap chicken for salmon if desired.
