- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- Buttercream frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1–2 tbsp milk
- 1/2 tsp vanilla extract
- Green food coloring

- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream butter and granulated sugar until light and fluffy.
- Beat in egg and vanilla extract.
- Gradually add dry ingredients until dough forms.
- Roll dough into balls and flatten slightly. Place on prepared baking sheets.
- Bake for 10–12 minutes until edges are lightly golden. Cool completely.
- For buttercream frosting, beat butter until creamy. Add powdered sugar gradually, then milk and vanilla. Mix until smooth. Add green food coloring as desired.
- Frost cooled cookies and decorate with sprinkles or St. Patrick’s Day designs.
Notes
For softer cookies, do not overbake. Use a piping bag for more precise frosting designs. Store cookies in an airtight container at room temperature for up to 5 days.
