Ingredients

Rice flour (2 cups)
Sugar (1 cup)
Baking powder (2 tsp)
Evaporated milk (1 cup)
Water (1 cup)
Eggs (2)
Cheese, sliced (1 cup)
Salt (1/2 tsp)


Instructions

In a bowl, mix rice flour, sugar, baking powder, and salt.
In another bowl, whisk evaporated milk, water, and eggs.
Gradually add wet ingredients to dry ingredients, mixing until smooth.
Pour batter into greased muffin molds.
Top each with a slice of cheese.
Steam over boiling water for 20-25 minutes or until firm.
Let cool before removing from molds.
