- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup granulated sugar (for filling)
- 2 tbsp all-purpose flour (for filling)
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest

- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, combine 1 1/2 cups flour, 1/2 cup sugar, salt, and baking powder. Stir in melted butter until crumbly. Press half into the prepared pan to form the base.
- In another bowl, whisk together eggs, 1 cup sugar, 2 tbsp flour, lemon juice, and lemon zest until smooth. Pour over the crust.
- Sprinkle remaining crumb mixture evenly on top of the lemon layer.
- Bake for 30–35 minutes until the top is golden and lemon layer is set.
- Cool completely before cutting into bars. Optional: dust with powdered sugar before serving.
Notes
Optional: Add a teaspoon of vanilla extract to the lemon filling for extra flavor. Store in an airtight container at room temperature for up to 3 days or in the fridge for up to 5 days.
