- 1 package (9–12 oz) cheese tortellini
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/2 cup Italian dressing (store-bought or homemade)
- 1/4 cup grated Parmesan cheese
- 1 tsp dried Italian herbs or 1 tbsp fresh basil, chopped
- Salt and black pepper, to taste

- Cook tortellini according to package directions. Drain and rinse under cold water to cool.
- In a large bowl, combine cooled tortellini, cherry tomatoes, cucumber, red bell pepper, red onion, and black olives.
- Add Italian dressing, Parmesan cheese, and Italian herbs. Toss gently to coat everything evenly.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving for best flavor.
- Garnish with fresh basil if desired and serve cold or at room temperature.
Notes
For extra protein, add cooked chicken, salami, or chickpeas. You can also swap vegetables based on season or preference.
