- 2 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 jalapeño, seeded and diced (optional)
- 1 red bell pepper, diced
- 1 tsp ground cumin
- 1 tsp chili powder
- 6 cups chicken broth
- 2 cups cooked shredded chicken
- 1 can (14 oz) fire-roasted diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- Salt and pepper to taste
- Juice of 1 lime
- Toppings: crispy tortilla strips, avocado, cilantro, shredded cheese, sour cream
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, jalapeño, and bell pepper. Sauté until softened.
- Stir in cumin and chili powder, cooking for 1 minute to release flavor.
- Add chicken broth, tomatoes, beans, corn, and shredded chicken. Stir well and bring to a boil.
- Reduce heat and simmer for 20–25 minutes to let flavors meld.
- Stir in lime juice and season with salt and pepper.
- Serve hot with tortilla strips, avocado, cilantro, cheese, and sour cream.
Notes
For extra depth, add a roasted poblano pepper or a smoky chipotle in adobo. This soup also freezes well—perfect for meal prep!
