- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 package (3 oz) lime Jello powder
- Optional: lime zest for extra flavor

- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in egg and vanilla extract until combined.
- In another bowl, whisk together flour, baking soda, salt, and lime Jello powder.
- Gradually mix dry ingredients into wet ingredients until dough forms. Add lime zest if desired.
- Roll dough into 1-inch balls and place on prepared baking sheets.
- Flatten slightly with the bottom of a glass or your hand.
- Bake for 10–12 minutes until edges are lightly golden. Cool on baking sheets for 5 minutes before transferring to a wire rack.
Notes
For extra lime flavor, sprinkle a little sugar mixed with lime zest on top before baking. Store in an airtight container at room temperature for up to 5 days.
