- 4 boneless, skinless chicken breasts
- 1/2 cup dill pickle juice
- 1 cup grated Parmesan cheese
- 1 cup panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp dried dill
- 1/2 tsp paprika
- Salt and black pepper to taste
- 2 large eggs
- 2 tbsp olive oil (for drizzling or pan-frying)
- Optional: fresh chopped parsley for garnish

- Place chicken in a shallow dish and pour pickle juice over it. Marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In one bowl, whisk eggs. In another bowl, combine Parmesan, panko, garlic powder, dill, paprika, salt, and pepper.
- Remove chicken from marinade and pat dry. Dip each piece into egg, then coat thoroughly in the Parmesan-panko mixture.
- Place coated chicken on the baking sheet and drizzle lightly with olive oil.
- Bake for 22–25 minutes, or until golden brown and internal temperature reaches 165°F (74°C).
- Garnish with parsley and serve warm.
Notes
For extra crispiness, broil for the last 2–3 minutes. You can also air fry at 375°F for 14–16 minutes. Serve with a side salad, roasted vegetables, or mashed potatoes.
