- Add eggs one at a time, then mix in vanilla and sour cream.
- Gradually add dry ingredients and mix until just combined.
- Fold in blueberries gently.
- Make cream cheese filling: Beat cream cheese, sugar, egg yolk, and vanilla until smooth.
- Assemble: Spread half the bread batter into the loaf pan.
- Spread the cream cheese filling evenly over the batter.
- Top with the remaining bread batter and smooth the surface.
- Bake: Bake for 55–65 minutes or until a toothpick inserted into the bread portion comes out clean.
- Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
Notes
If using frozen blueberries, do not thaw them before adding to the batter. For extra flavor, drizzle cooled bread with a simple powdered sugar glaze.
