  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup fresh or frozen blueberries
  • 2 tbsp honey or maple syrup
  • 1/2 cup chicken broth
  • 1 tbsp balsamic vinegar
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • 1 clove garlic, minced
  • Optional garnish: fresh thyme sprigs or extra blueberries

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken 3–4 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds until fragrant.
  4. Add blueberries, honey, chicken broth, balsamic vinegar, and thyme. Simmer for 5–6 minutes until sauce slightly thickens.
  5. Return chicken to the skillet, spoon sauce over it, cover, and cook 5–7 minutes until chicken is cooked through (165°F internal temperature).
  6. Serve chicken with sauce spooned over the top. Garnish with fresh thyme or extra blueberries if desired.

Notes

Optional: Add a splash of lemon juice for brightness. Serve with rice, quinoa, or roasted vegetables.
