- 1 small onion, diced
- 3 cloves garlic, minced
- 1 lb boneless chicken breast or thighs
- 6 cups chicken broth
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 8 lasagna noodles, broken into pieces
- 2 cups spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup ricotta cheese (for topping)
- 1 cup shredded mozzarella cheese (optional)
- Fresh parsley (for garnish)

- Sauté base: Heat olive oil in a large pot. Add onion and cook until soft, about 4–5 minutes. Add garlic and cook 1 minute.
- Cook chicken: Add chicken, broth, Italian seasoning, salt, and pepper. Simmer for 15–20 minutes until chicken is cooked through.
- Shred chicken: Remove chicken, shred it, and return it to the pot.
- Add pasta: Stir in broken lasagna noodles and cook until tender, about 10–12 minutes.
- Make creamy: Stir in heavy cream, Parmesan cheese, and spinach. Cook until spinach wilts.
- Serve: Ladle into bowls and top with ricotta, mozzarella, and parsley.
Notes
For extra flavor, add a pinch of red pepper flakes or a splash of white wine when sautéing the onions. You can also swap chicken for Italian sausage.
