- 1 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 large eggs
- 1 tbsp vanilla extract

- 6 oz white chocolate, melted and cooled
- 1 cup shredded coconut (for frosting)
- 1 cup chopped pecans (for frosting)
- 1 cup evaporated milk (for frosting)
- 1/2 cup brown sugar (for frosting)
- 1/2 cup butter (for frosting)
- 3 egg yolks (for frosting)

- Preheat oven: Set to 350°F (175°C). Grease and line two or three cake pans.
- Mix dry ingredients: Whisk flour, baking powder, and salt together.
- Cream butter & sugar: Beat butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla and melted white chocolate.
- Combine: Alternately add dry ingredients and milk until smooth batter forms.
- Bake: Divide into pans and bake 25–30 minutes. Cool completely.
- Make frosting: Cook evaporated milk, brown sugar, butter, and egg yolks over medium heat until thickened.
- Stir in coconut and pecans, then cool.
- Assemble: Layer cake with frosting between each layer and on top.
Notes
For extra richness, add a drizzle of white chocolate ganache on top. Chill before slicing for cleaner layers.
