  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs

  • 1 cup milk
  • 6 oz white chocolate, melted and cooled
  • 1 cup shredded coconut (for frosting)
  • 1 cup chopped pecans (for frosting)
  • 1 cup evaporated milk (for frosting)
  • 1/2 cup brown sugar (for frosting)
  • 1/2 cup butter (for frosting)
  • 3 egg yolks (for frosting)

  1. Preheat oven: Set to 350°F (175°C). Grease and line two or three cake pans.
  2. Mix dry ingredients: Whisk flour, baking powder, and salt together.
  3. Cream butter & sugar: Beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla and melted white chocolate.
  5. Combine: Alternately add dry ingredients and milk until smooth batter forms.
  6. Bake: Divide into pans and bake 25–30 minutes. Cool completely.
  7. Make frosting: Cook evaporated milk, brown sugar, butter, and egg yolks over medium heat until thickened.
  8. Stir in coconut and pecans, then cool.
  9. Assemble: Layer cake with frosting between each layer and on top.

Notes

For extra richness, add a drizzle of white chocolate ganache on top. Chill before slicing for cleaner layers.
