- 8 oz white chocolate or white chocolate chips

Instructions
- Preheat oven to 350Β°F (175Β°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together butter and brown sugar until light and fluffy. Add maple syrup and egg, and mix until smooth.
- In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add to wet ingredients and mix until combined.
- Roll dough into 1.5-inch balls and place on prepared baking sheets, spacing 2 inches apart.
- Bake for 9β11 minutes, until edges are set but centers look slightly soft. Let cool on pans for 5 minutes, then transfer to wire racks to cool completely.
- Melt white chocolate with coconut oil until smooth. Dip half of each cooled cookie in chocolate and place on parchment to set. Add sprinkles if desired.
- Allow chocolate to harden before serving or storing in an airtight container.
