Ingredients

- 1 large head of cauliflower, cut into florets
- 2 tbsp olive oil or butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 5 cups vegetable or chicken broth
- 1/2 cup heavy cream or coconut milk
- 1 tsp fresh sage, finely chopped (or 1/2 tsp dried sage)
- Salt and black pepper, to taste
- Fresh sage leaves, fried in olive oil (for garnish)
Instructions
- In a large pot, heat olive oil or butter over medium heat. Add onion and garlic, cooking until fragrant and translucent, about 5 minutes.
- Add cauliflower florets and broth. Bring to a boil, then reduce heat and simmer for 20 minutes, until cauliflower is tender.
- Using an immersion blender, puree the soup until smooth and velvety.
- Stir in cream (or coconut milk) and chopped sage. Season with salt and pepper to taste.
- Serve hot, garnished with crispy sage leaves for an elegant touch.
Notes
For extra depth, roast the cauliflower before adding it to the pot. This soup pairs beautifully with crusty bread or a light salad.
