- Salt and pepper, to taste
- 4 medium sweet potatoes, peeled and cubed
- 2 tbsp vegan butter or olive oil
- 1/4 cup unsweetened plant-based milk
- Salt and pepper, to taste
- Optional garnish: fresh herbs like parsley or thyme
Instructions
- Preheat oven to 425Β°F (220Β°C) and line a baking sheet with parchment paper.
- Brush cauliflower steaks with olive oil, sprinkle with smoked paprika, salt, and pepper.
- Roast cauliflower in the oven for 20β25 minutes, flipping halfway, until golden and tender.
- Meanwhile, boil sweet potatoes in salted water until tender, about 15 minutes.
- Drain sweet potatoes and mash with vegan butter and plant-based milk. Season with salt and pepper.
- Serve cauliflower steaks over mashed sweet potatoes, garnished with fresh herbs if desired.
