- Cream butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla.
- In a separate bowl, whisk flour, cocoa powder, baking soda, and salt.
- Gradually mix dry ingredients into wet ingredients until combined.
- Scoop dough into balls and place on baking sheets, spacing apart.
- Bake for 9–11 minutes until set. Cool completely.
- Make ganache: Heat heavy cream until just simmering. Pour over chocolate chips and let sit 2 minutes, then stir until smooth.
- Spoon ganache over cooled cookies and top with Valentine sprinkles.
- Allow ganache to set before serving.
Notes
For extra decadence, chill ganache slightly before topping cookies for a thicker layer. Store cookies in a cool place to keep the ganache set.
