- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup mascarpone cheese, softened
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons espresso powder
- Cocoa powder for dusting
- Optional glaze: 1/2 cup powdered sugar + 1–2 tbsp strong brewed coffee
Instructions
- Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Cream together the butter and sugar until light and fluffy.
- Mix in the egg, vanilla extract, and mascarpone until smooth.
- In a separate bowl, whisk together the flour, baking powder, salt, and espresso powder.
- Add dry ingredients to the wet ingredients and mix until fully incorporated.
- Scoop dough onto the baking sheet, spacing evenly.
- Bake 10–12 minutes, or until the edges are set but the centers remain soft.
- Let cool, then dust with cocoa powder or drizzle with coffee glaze.
Notes
For stronger espresso flavor, increase the espresso powder to 3 tablespoons. Cookies stay soft for 3–4 days when stored in an airtight container.
