Description

These Tiramisu Cookies are soft, tender, and infused with rich espresso and mascarpone flavor — all without any chilling time! Perfect for coffee lovers and ideal for a quick, elevated dessert.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mascarpone cheese, softened
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons espresso powder
  • Cocoa powder for dusting
  • Optional glaze: 1/2 cup powdered sugar + 1–2 tbsp strong brewed coffee

Instructions

  1. Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. Cream together the butter and sugar until light and fluffy.
  3. Mix in the egg, vanilla extract, and mascarpone until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and espresso powder.
  5. Add dry ingredients to the wet ingredients and mix until fully incorporated.
  6. Scoop dough onto the baking sheet, spacing evenly.
  7. Bake 10–12 minutes, or until the edges are set but the centers remain soft.
  8. Let cool, then dust with cocoa powder or drizzle with coffee glaze.

Notes

For stronger espresso flavor, increase the espresso powder to 3 tablespoons. Cookies stay soft for 3–4 days when stored in an airtight container.
