Instructions
- Heat olive oil or butter in a large pot over medium heat. Sauté onion and garlic until soft and fragrant.
- Add cubed butternut squash, broth, cinnamon, nutmeg, ginger, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20–25 minutes, until squash is tender.
- Blend the soup using an immersion blender or in batches using a countertop blender until smooth.
