These Soft Cinnamon Roll Cookies taste just like your favorite bakery cinnamon rolls but in cookie form! Soft, buttery, swirled with cinnamon-sugar, and topped with a sweet glaze — they’re a cozy treat perfect for any occasion.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 3 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup unsalted butter, melted (for filling)
- 1/2 cup brown sugar
- 1 1/2 tbsp ground cinnamon
- 1 cup powdered sugar
- 2–3 tbsp milk (for glaze)
Instructions
- Preheat oven: Heat to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter & sugar: Beat butter and granulated sugar until light and fluffy. Mix in eggs and vanilla.
- Mix dry ingredients: In a separate bowl, whisk flour, baking soda, baking powder, and salt.
- Combine: Gradually add dry mixture to wet until dough forms. Chill dough for 30 minutes.
- Roll & fill: Roll dough into a rectangle. Brush with melted butter, sprinkle with brown sugar and cinnamon.
- Shape & slice: Roll dough into a log, slice into rounds, and place on baking sheet.
- Bake: Bake 10–12 minutes until edges are set but centers remain soft.
- Glaze: Mix powdered sugar and milk until smooth; drizzle over cooled cookies.
Notes
For a stronger cinnamon flavor, add a pinch of nutmeg to the filling. These cookies stay soft for days when stored in an airtight container.
