Description
These pecan pie cookies taste just like classic pecan pie but in handheld cookie form. Soft, buttery, and filled with gooey pecan filling, they’re the perfect holiday dessert!

- Cookie Dough:
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1 large egg
- 2 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- Pecan Pie Filling:
- 1 cup finely chopped pecans
- 1/2 cup brown sugar
- 1/4 cup light corn syrup (or maple syrup)
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream butter and brown sugar until light and fluffy. Beat in egg and vanilla.
- Whisk together flour, baking powder, and salt. Gradually mix into wet ingredients until dough forms.
- Roll dough into 1-inch balls and place on baking sheets. Press the center of each ball to create an indentation.
- In a small bowl, stir together chopped pecans, brown sugar, corn syrup, melted butter, vanilla, and salt.
- Spoon pecan filling into each cookie indentation.
- Bake for 10–12 minutes or until edges are golden. Allow to cool before serving.
Notes
Store in an airtight container for up to 5 days, or freeze for longer storage. Perfect for holiday cookie trays!
