- 4 large yellow onions, thinly sliced
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp all-purpose flour
- 6 cups beef broth
- 1/2 cup dry white wine (optional)
- 1 tsp dried thyme or 2 sprigs fresh thyme
- 1 bay leaf
- Baguette slices, toasted
- 1 1/2 cups shredded Gruyère or Swiss cheese
Instructions
- In a large pot, melt butter with olive oil over medium heat. Add sliced onions, sugar, salt, and pepper. Cook, stirring often, until onions are caramelized and golden brown, about 25–30 minutes.
- Add garlic and cook for 1 minute more. Stir in flour and cook for 1–2 minutes to remove the raw taste.
- Pour in broth and wine (if using). Add thyme and bay leaf. Bring to a boil, then reduce heat and simmer for 20–25 minutes.
- Remove bay leaf. Preheat broiler. Ladle soup into oven-safe bowls.
- Top each bowl with toasted baguette slices and a generous sprinkle of Gruyère.
- Broil until cheese is melted and bubbly, 2–3 minutes. Serve hot.
Notes
For the best flavor, take time to caramelize the onions slowly. You can substitute Swiss cheese if Gruyère isn’t available.
