- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 8 oz ricotta cheese, drained
- 1/4 cup powdered sugar
- 1/2 tsp cinnamon (optional)
- 1/2 cup mini chocolate chips
- Festive holiday sprinkles (optional)
Instructions
- Preheat oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and granulated sugar until light and fluffy. Mix in vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture until a dough forms.
- Roll dough into 1-inch balls and place on prepared baking sheets. Bake 10β12 minutes or until lightly golden. Cool completely.
- Meanwhile, in a bowl, mix ricotta, powdered sugar, and cinnamon (if using) until smooth. Fold in chocolate chips.
- Once cookies are cooled, spread or pipe the ricotta filling onto half of the cookies, then top with remaining cookies to form sandwiches.
- Decorate with sprinkles if desired. Chill for 30 minutes before serving for best texture.
