- 1 small onion, diced

- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup frozen corn
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup cornmeal
- 1 cup milk
- 1 egg
- 2 tbsp butter, melted
- 1/2 tsp salt
- 1/2 tsp baking powder

- Preheat oven: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook beef: In a skillet over medium heat, cook ground beef with onion, bell pepper, and garlic until browned. Drain excess fat. Stir in diced tomatoes, corn, and taco seasoning.
- Prepare cornbread: In a bowl, mix cornmeal, milk, egg, melted butter, salt, and baking powder until smooth.
- Assemble casserole: Spread beef mixture evenly in the baking dish. Pour cornbread batter over the top and spread gently.
- Bake: Bake uncovered 25–30 minutes until cornbread is set and golden. Sprinkle cheese on top during the last 5 minutes of baking.
- Serve: Let cool 5 minutes before serving.
Notes
Optional: Add chopped jalapeños for a spicier version. You can also use a mix of cheddar and Monterey Jack cheese for extra flavor.
