  • 1 cup frozen corn
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup cornmeal
  • 1 cup milk
  • 1 egg
  • 2 tbsp butter, melted
  • 1/2 tsp salt
  • 1/2 tsp baking powder

  1. Preheat oven: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook beef: In a skillet over medium heat, cook ground beef with onion, bell pepper, and garlic until browned. Drain excess fat. Stir in diced tomatoes, corn, and taco seasoning.
  3. Prepare cornbread: In a bowl, mix cornmeal, milk, egg, melted butter, salt, and baking powder until smooth.
  4. Assemble casserole: Spread beef mixture evenly in the baking dish. Pour cornbread batter over the top and spread gently.
  5. Bake: Bake uncovered 25–30 minutes until cornbread is set and golden. Sprinkle cheese on top during the last 5 minutes of baking.
  6. Serve: Let cool 5 minutes before serving.

Notes

Optional: Add chopped jalapeños for a spicier version. You can also use a mix of cheddar and Monterey Jack cheese for extra flavor.
