  • 3 eggs
  • 3/4 cup sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1 tbsp flour

  4. Prepare filling: Whisk eggs, sugar, cream, vanilla, and flour until smooth.
  5. Assemble: Spread rhubarb evenly in crust, then pour custard over top.
  6. Bake: Bake 35–40 minutes until custard is set.
  7. Cool: Let cool completely before slicing.
  8. Serve: Dust with powdered sugar if desired.
