- 1 cup heavy cream
- 1 tsp vanilla extract
- 1 tbsp flour

- Preheat oven: Set to 350°F (175°C).
- Pre-bake crust: Bake crust for 10–12 minutes until lightly set.
- Prepare filling: Whisk eggs, sugar, cream, vanilla, and flour until smooth.
- Assemble: Spread rhubarb evenly in crust, then pour custard over top.
- Bake: Bake 35–40 minutes until custard is set.
- Cool: Let cool completely before slicing.
- Serve: Dust with powdered sugar if desired.
Notes
For a sweeter tart, toss rhubarb with a little sugar before adding. You can add strawberries for a softer, fruitier flavor. Chill before serving for cleaner slices.
