  • 1 tbsp chopped parsley or green onions (optional)

  2. Roast sweet potatoes: Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread evenly on the baking sheet and roast for 25–30 minutes, turning halfway, until tender and slightly crispy.
  3. Make honey garlic sauce: In a small pan over medium heat, sauté minced garlic for about 30 seconds. Add honey and soy sauce, stirring well. If a thicker sauce is desired, add the cornstarch mixture and cook until slightly thickened.
  4. Combine: Add roasted sweet potatoes to a bowl and drizzle the honey garlic sauce over them. Toss gently to coat.
  5. Garnish and serve: Sprinkle with sesame seeds and chopped parsley or green onions before serving.

Notes

For extra flavor, add a pinch of red pepper flakes to the sauce for a mild kick. These sweet potatoes are great served alongside grilled chicken, salmon, or tofu. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or skillet.
