- Preheat oven: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roast sweet potatoes: Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread evenly on the baking sheet and roast for 25–30 minutes, turning halfway, until tender and slightly crispy.
- Make honey garlic sauce: In a small pan over medium heat, sauté minced garlic for about 30 seconds. Add honey and soy sauce, stirring well. If a thicker sauce is desired, add the cornstarch mixture and cook until slightly thickened.
- Combine: Add roasted sweet potatoes to a bowl and drizzle the honey garlic sauce over them. Toss gently to coat.
- Garnish and serve: Sprinkle with sesame seeds and chopped parsley or green onions before serving.
Notes
For extra flavor, add a pinch of red pepper flakes to the sauce for a mild kick. These sweet potatoes are great served alongside grilled chicken, salmon, or tofu. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or skillet.
