- 4 cups mashed sweet potatoes (about 3 large)
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1/3 cup milk or cream
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
- Topping:
- 2 cups mini marshmallows
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat oven to 350Β°F (175Β°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine mashed sweet potatoes, melted butter, brown sugar, granulated sugar, eggs, milk, vanilla, cinnamon, nutmeg, and salt. Mix until smooth and creamy.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake uncovered for 25β30 minutes until slightly set and warm.
- Top evenly with mini marshmallows (and pecans if using).
- Return to the oven and bake for an additional 10β12 minutes, or until marshmallows are golden and lightly toasted.
- Cool slightly before serving warm.
