- 1 lb (450g) ground turkey
- 2 large sweet potatoes, peeled and diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup shredded mozzarella or cheddar cheese
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp chili powder (optional)
- Salt and black pepper, to taste
- Fresh parsley, for garnish
Instructions
- Preheat oven to 375Β°F (190Β°C). Grease a medium baking dish.
- Toss diced sweet potatoes with 1 tbsp olive oil, salt, pepper, and paprika. Roast for 20 minutes or until slightly tender.
- Meanwhile, heat 1 tbsp olive oil in a large skillet. Add ground turkey and cook until browned.
- Add onion, garlic, and bell pepper to the pan; sautΓ© for 3β4 minutes until softened.
- Season with oregano, chili powder, salt, and pepper. Stir well.
- Combine roasted sweet potatoes and turkey mixture in the baking dish. Mix lightly to combine.
- Top with shredded cheese and bake for 10β15 minutes, or until cheese is melted and bubbly.
- Garnish with fresh parsley and serve warm.
