- 2 lbs boneless, skinless chicken thighs or breasts
- 1 can (20 oz) pineapple chunks with juice
- 1/2 cup brown sugar
- 1/3 cup soy sauce
- 3 cloves garlic, minced
- 1 tsp grated ginger (optional)
- 1/2 tsp black pepper
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 tbsp cornstarch (optional)
- 2 tbsp water (for slurry)
- Green onions, sliced (for garnish)

- Prepare sauce: In a bowl, mix pineapple with juice, brown sugar, soy sauce, garlic, ginger, and black pepper.
- Assemble: Place chicken in the crockpot and pour sauce over it.
- Add vegetables: Add sliced bell peppers on top.
- Cook: Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours until chicken is tender.
- Shred or slice: Remove chicken, shred or slice, then return to the slow cooker.
- Thicken sauce (optional): Stir in cornstarch slurry and cook 15–20 minutes until thickened.
- Serve: Garnish with green onions and serve over rice.
Notes
For extra flavor, sear the chicken before adding it to the crockpot. Add a splash of rice vinegar or chili flakes for a sweet-heat twist.
