  • 2 tbsp soy sauce
  • 2 tbsp pineapple juice
  • 1 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp fresh ginger, grated
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • 2 tbsp vegetable oil
  • Salt and pepper, to taste
  • Optional: sliced green onions and sesame seeds for garnish

  1. Cook the chicken: Heat vegetable oil in a large skillet over medium-high heat. Season chicken lightly with salt and pepper, then cook until golden and cooked through. Remove and set aside.
  2. Sauté vegetables: In the same pan, add onion, garlic, and ginger. Cook for about 2 minutes until fragrant.
  3. Add pineapple and peppers: Stir in pineapple chunks and diced bell pepper and cook for another 2–3 minutes.
  4. Prepare the sauce: Add soy sauce, pineapple juice, honey, and rice vinegar. Stir to combine.
  5. Thicken the sauce: Stir in the cornstarch slurry and cook until the sauce thickens slightly.
  6. Combine: Return the chicken to the pan and toss to coat with the sauce.
  7. Serve: Garnish with green onions and sesame seeds. Serve hot over rice or noodles.

Notes

For extra flavor, add a pinch of chili flakes or a splash of sriracha for heat. You can also substitute chicken with shrimp or tofu for a different twist.
