Ingredients

- 2 cups vital wheat gluten
- 1/4 cup nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup vegetable broth
- 1/4 cup soy sauce or tamari
- 2 tbsp olive oil
- 1 tbsp tomato paste
- Optional: fresh herbs like thyme and rosemary for extra flavor
- For basting: 1/4 cup vegan butter melted
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix vital wheat gluten, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- In a separate bowl, whisk together vegetable broth, soy sauce, olive oil, and tomato paste.
- Add wet ingredients to dry ingredients and knead for 3–5 minutes until a dough forms.
- Shape the dough into a loaf or turkey shape and place it in a lightly greased baking dish.
- Baste the top with melted vegan butter and optionally sprinkle with fresh herbs.
- Cover loosely with foil and bake for 45 minutes. Remove foil, baste again, and bake for another 15–20 minutes until firm and golden.
- Let rest for 10 minutes before slicing and serving.
Notes
You can make this ahead of time and reheat. Serve with vegan gravy for a classic holiday meal.
