Ingredients

  • 2 cups vital wheat gluten
  • 1/4 cup nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup vegetable broth
  • 1/4 cup soy sauce or tamari
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • Optional: fresh herbs like thyme and rosemary for extra flavor
  • For basting: 1/4 cup vegan butter melted

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix vital wheat gluten, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. In a separate bowl, whisk together vegetable broth, soy sauce, olive oil, and tomato paste.
  4. Add wet ingredients to dry ingredients and knead for 3–5 minutes until a dough forms.
  5. Shape the dough into a loaf or turkey shape and place it in a lightly greased baking dish.
  6. Baste the top with melted vegan butter and optionally sprinkle with fresh herbs.
  7. Cover loosely with foil and bake for 45 minutes. Remove foil, baste again, and bake for another 15–20 minutes until firm and golden.
  8. Let rest for 10 minutes before slicing and serving.

Notes

You can make this ahead of time and reheat. Serve with vegan gravy for a classic holiday meal.
