This Summer Berry Icebox Cake is a no-bake, layered dessert that’s cool, creamy, and bursting with fresh berries. With layers of whipped cream, graham crackers, and juicy strawberries and blueberries, it’s the perfect patriotic treat for 4th of July or any warm-weather gathering!

- 3 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 box (14.4 oz) graham crackers
- 1 1/2 cups sliced strawberries
- 1 1/2 cups blueberries
- Optional garnish: more berries, crushed graham crackers, or mint
Instructions
- Make the Whipped Cream: In a large bowl, beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Layer the Base: Spread a thin layer of whipped cream on the bottom of a 9×13-inch dish. Add a layer of graham crackers on top, breaking as needed to fit.
- Build the Layers: Spread about 1/3 of the whipped cream over the graham crackers. Top with a layer of sliced strawberries and blueberries. Repeat the layers two more times, ending with a layer of whipped cream and a decorative topping of berries.
- Chill: Cover and refrigerate for at least 4 hours, or overnight, to allow the graham crackers to soften and flavors to meld.
- Serve: Slice and serve chilled. Garnish with fresh berries or mint if desired.
Notes
Make sure to use ripe, juicy berries for best flavor. This recipe is perfect to make a day ahead and can be easily adapted with other seasonal fruits like raspberries or peaches.
