- 1 1/2 cups sugar cookie crumbs (about 15 cookies, crushed)
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 2/3 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- Optional: additional sugar cookie pieces or sprinkles for topping
Instructions
- Preheat oven to 325Β°F (163Β°C). Grease a 9-inch springform pan.
- Combine sugar cookie crumbs and melted butter. Press mixture into the bottom of the prepared pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing well. Stir in vanilla extract.
- Pour cheesecake filling over crust and smooth the top.
- Bake for 45β50 minutes or until the center is set.
- Allow to cool to room temperature, then chill in refrigerator for at least 4 hours or overnight.
- Optional: Top with sugar cookie pieces or sprinkles before serving.
