  • 2 cups fresh spinach
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped (optional)
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • Kitchen twine, for tying

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet or oven dish with foil.
  2. Butterfly the pork tenderloin by slicing lengthwise down the center, being careful not to cut all the way through. Open and flatten it gently.
  3. In a skillet, heat olive oil and sauté garlic and spinach until wilted. Remove from heat and mix in cream cheese, Parmesan, sun-dried tomatoes, and Italian seasoning. Season with salt and pepper.
  4. Spread the filling evenly over the pork, then roll it tightly and tie with kitchen twine.
  5. Place the stuffed pork on the baking dish, drizzle with olive oil, and roast for 25–30 minutes or until the internal temperature reaches 145°F (63°C).
  6. Let it rest for 5–10 minutes before slicing. Serve warm and enjoy!
