- 1 pork tenderloin (about 1 lb)
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 2 cups fresh spinach
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes, chopped (optional)
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- Kitchen twine, for tying
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet or oven dish with foil.
- Butterfly the pork tenderloin by slicing lengthwise down the center, being careful not to cut all the way through. Open and flatten it gently.
- In a skillet, heat olive oil and sauté garlic and spinach until wilted. Remove from heat and mix in cream cheese, Parmesan, sun-dried tomatoes, and Italian seasoning. Season with salt and pepper.
- Spread the filling evenly over the pork, then roll it tightly and tie with kitchen twine.
- Place the stuffed pork on the baking dish, drizzle with olive oil, and roast for 25–30 minutes or until the internal temperature reaches 145°F (63°C).
- Let it rest for 5–10 minutes before slicing. Serve warm and enjoy!
