- Preheat oven: Preheat to 350°F (175°C) and line baking sheets with parchment paper.
- Cream butter & sugar: In a large bowl, beat butter and sugar until light and fluffy. Add egg and vanilla extract, mixing until combined.
- Mix dry ingredients: In a separate bowl, whisk flour, baking powder, salt, and crushed freeze-dried strawberries.
- Gradually add dry ingredients to wet ingredients and mix until dough forms.
- Shape cookies: Scoop tablespoon-sized portions onto prepared baking sheets, spacing 2 inches apart.
- Bake: Bake 10–12 minutes until edges are lightly golden. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Top & serve: Once cooled, top each cookie with a small dollop of whipped cream and a few chopped fresh strawberries.
Notes
For best results, use freeze-dried strawberries in the dough for concentrated flavor. Cookies can be stored in an airtight container for up to 3 days without whipped cream.
