  • 1/2 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C). Place rack in the lower third of the oven.
  2. Prepare Filling: In a bowl, toss rhubarb, strawberries, sugar, cornstarch, lemon juice, and vanilla. Let sit for 10–15 minutes.
  3. Assemble Pie Base: Fit pie crust into a 9-inch pie dish. Pour the filling evenly into the crust.
  4. Make Crumb Topping: In a separate bowl, mix oats, flour, brown sugar, cinnamon, and salt. Cut in butter using a pastry cutter or fork until mixture forms coarse crumbs.
