- Make filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Set aside.
- Mix dry: Combine flour, sugar, baking powder, baking soda, and salt.
- Mix wet: Whisk melted butter, eggs, milk, and vanilla.
- Combine: Stir wet ingredients into dry until just combined.
- Add strawberries: Gently fold in chopped strawberries.
- Fill: Add batter to muffin cups, then add a spoonful of cream cheese filling and swirl lightly.
- Bake: Bake 18–22 minutes until golden and set.
- Cool: Let cool before serving.
Notes
Don’t overmix the batter or muffins may become dense. Frozen strawberries can be used—just thaw and drain well first.
