- 12 oz elbow macaroni
- 2 cups shredded sharp cheddar cheese
- 1/2 cup shredded mozzarella (optional for extra creaminess)
- 2 cups whole milk
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- Optional: a pinch of paprika or mustard powder for flavor
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- In the same pot, melt butter over medium heat. Whisk in flour and cook for 1 minute to make a roux.
- Gradually whisk in milk, stirring constantly until smooth and slightly thickened.
- Reduce heat to low and add shredded cheeses, stirring until melted and creamy.
- Season with garlic powder, salt, and pepper to taste.
- Add the cooked pasta back to the sauce and mix until well coated.
