- 3 pounds Yukon Gold potatoes, cut into bite-sized pieces
- 8 slices bacon, cooked and crumbled
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 cup sliced green onions
- 3/4 cup sour cream
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp chopped fresh parsley

- Cook potatoes: Place potatoes in a large pot and cover with cold salted water. Bring to a boil and cook for 12–15 minutes until fork-tender. Drain and cool.
- Prepare dressing: In a large bowl, whisk together sour cream, mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper.
- Combine: Add cooled potatoes, bacon, cheddar cheese, and green onions to the bowl.
- Mix gently: Fold everything together until evenly coated.
- Chill: Cover and refrigerate for at least 1 hour before serving.
- Garnish: Sprinkle with parsley, additional bacon, cheddar cheese, and green onions.
- Serve chilled or slightly cool.
Notes
For extra steakhouse flavor, add a tablespoon of prepared horseradish to the dressing. This salad can be prepared a day in advance and tastes even better after chilling overnight.
