- 2 zucchini, sliced into thick rounds
- 3 tbsp olive oil
- 1/4 cup soy sauce
- 2 tbsp Worcestershire sauce
- 2 tbsp balsamic vinegar
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 1/2 tsp salt

- Prep skewers: If using wooden skewers, soak in water for 20–30 minutes.
- Assemble kabobs: Thread steak, bell peppers, onion, mushrooms, and zucchini onto skewers, alternating ingredients.
- Preheat grill: Heat grill to medium-high and lightly oil grates.
- Grill kabobs: Cook for 8–12 minutes, turning every few minutes until steak reaches desired doneness.
- Rest: Remove from grill and let rest for 5 minutes before serving.
- Serve: Garnish with fresh parsley and serve warm.
