  • 1 red onion, cut into wedges
  • 2 cups mushrooms
  • 2 zucchini, sliced into thick rounds
  • 3 tbsp olive oil
  • 1/4 cup soy sauce
  • 2 tbsp Worcestershire sauce
  • 2 tbsp balsamic vinegar
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • Wooden or metal skewers

  1. Make marinade: In a bowl, whisk together olive oil, soy sauce, Worcestershire sauce, balsamic vinegar, garlic, smoked paprika, oregano, salt, and pepper.
  2. Marinate steak: Add steak cubes to the marinade and refrigerate for at least 1–4 hours (or overnight for best flavor).
  3. Prep skewers: If using wooden skewers, soak in water for 20–30 minutes.
  4. Assemble kabobs: Thread steak, bell peppers, onion, mushrooms, and zucchini onto skewers, alternating ingredients.
  5. Preheat grill: Heat grill to medium-high and lightly oil grates.
  6. Grill kabobs: Cook for 8–12 minutes, turning every few minutes until steak reaches desired doneness.
  7. Rest: Remove from grill and let rest for 5 minutes before serving.
  8. Serve: Garnish with fresh parsley and serve warm.

Notes

For extra flavor, add a splash of lemon juice or red wine to the marinade. Don’t overcook the steak—medium-rare to medium keeps it juicy and tender. Serve with rice, potatoes, or a fresh salad for a complete meal.
