- Cream together butter and sugar until light and fluffy.
- Beat in egg, vanilla extract, and peppermint extract until combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually mix dry ingredients into wet ingredients until a soft dough forms.
- Roll dough into 1-inch balls and place on prepared baking sheets, spaced 2 inches apart.
- Bake for 10–12 minutes until edges are lightly golden.
- Immediately press a green mint chocolate candy into the center of each cookie.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For a stronger mint flavor, add an extra 1/4 tsp peppermint extract. Store cookies in an airtight container for up to 5 days.
