- 3/4 cup unsalted butter, softened

- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream butter and sugar until light and fluffy. Add egg and vanilla and beat until combined.
- Gradually add flour mixture and mix until just combined.
- Roll dough into 1-inch balls and place 2 inches apart on prepared baking sheets. Flatten slightly if desired.
- Bake 10–12 minutes or until edges are lightly golden. Cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.
- Decorate with icing, sprinkles, or edible flowers as desired.
Notes
Optional: Add a teaspoon of lemon zest for a fresh flavor. Store in an airtight container at room temperature for up to 5 days.
