  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Add egg and vanilla and beat until combined.
  4. Gradually add flour mixture and mix until just combined.
  5. Roll dough into 1-inch balls and place 2 inches apart on prepared baking sheets. Flatten slightly if desired.
  6. Bake 10–12 minutes or until edges are lightly golden. Cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.
  7. Decorate with icing, sprinkles, or edible flowers as desired.

Notes

Optional: Add a teaspoon of lemon zest for a fresh flavor. Store in an airtight container at room temperature for up to 5 days.
