- Mix wet ingredients: In a separate large bowl, whisk sugar, eggs, oil, and vanilla until smooth.
- Stir diced peaches into the wet mixture.
- Combine: Gradually fold dry ingredients into wet ingredients until just combined.
- Fold in chopped pecans if using.
- Bake: Pour batter into prepared loaf pan and spread evenly.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve.
Notes
