- 6 large russet potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup shredded sharp cheddar cheese
- 1 cup heavy cream or half-and-half
- 2 tablespoons butter
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and black pepper, to taste
- Optional toppings: extra cheese, chopped chives, crumbled bacon
Instructions
- Melt butter in a large pot over medium heat. Sauté onion and garlic until soft and fragrant.
- Add diced potatoes, thyme, parsley, and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
- Use an immersion blender to blend until smooth and creamy.
- Stir in cheddar cheese and heavy cream. Heat gently until cheese is melted and soup is smooth.
- Season with salt and black pepper to taste.
- Serve hot with optional toppings such as extra cheese, chives, or bacon.
Notes
For a vegetarian version, use vegetable broth. You can also adjust herbs to taste—fresh herbs can be used for a brighter flavor.
