  • 46 boneless, skinless chicken thighs or breasts
  • 1 can (20 oz) pineapple chunks, with juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger (optional)
  • 1/2 tsp black pepper
  • 1 tbsp cornstarch (optional)
  • 2 tbsp water (for slurry)
  • Green onions, sliced (for garnish)

  4. Thicken sauce (optional): Mix cornstarch with water and stir into the slow cooker. Cook an additional 15–20 minutes until thickened.
  5. Serve: Spoon sauce and pineapple over chicken and garnish with green onions.

Notes
