- 4–6 boneless, skinless chicken thighs or breasts
- 1 can (20 oz) pineapple chunks, with juice
- 1/2 cup brown sugar
- 1/3 cup soy sauce
- 3 cloves garlic, minced
- 1 tsp grated fresh ginger (optional)
- 1/2 tsp black pepper
- 1 tbsp cornstarch (optional)
- 2 tbsp water (for slurry)
- Green onions, sliced (for garnish)

- Assemble: Place chicken in the slow cooker and pour the pineapple mixture over it.
- Cook: Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours until chicken is tender.
- Thicken sauce (optional): Mix cornstarch with water and stir into the slow cooker. Cook an additional 15–20 minutes until thickened.
- Serve: Spoon sauce and pineapple over chicken and garnish with green onions.
Notes
Serve over steamed rice for a complete meal. For a bit of heat, add red pepper flakes or a dash of sriracha. You can also add bell peppers for extra flavor and color.
