- 1 1/2 cups dried green or brown lentils, rinsed
- 2 medium potatoes, peeled and diced
- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp black pepper
- 1 1/2 tsp salt (or to taste)
- 8 cups vegetable broth
- 2 cups chopped greens (spinach, kale, or Swiss chard)
- 2 tbsp olive oil
- Juice of 1/2 lemon (optional, for brightness)
Instructions
- In a skillet, heat olive oil over medium heat. Sauté onions, carrots, celery, and garlic for 3–4 minutes until softened.
- Transfer vegetables to a slow cooker along with lentils, potatoes, cumin, paprika, salt, pepper, and vegetable broth. Stir well.
- Cover and cook on LOW for 7–8 hours or HIGH for 3–4 hours, until lentils and potatoes are tender.
- Stir in the greens during the last 15 minutes of cooking to wilt.
- Adjust seasoning and add lemon juice if desired before serving.
Notes
