  • 2 medium potatoes, peeled and diced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1 1/2 tsp salt (or to taste)
  • 8 cups vegetable broth
  • 2 cups chopped greens (spinach, kale, or Swiss chard)
  • 2 tbsp olive oil
  • Juice of 1/2 lemon (optional, for brightness)

Instructions

  1. In a skillet, heat olive oil over medium heat. Sauté onions, carrots, celery, and garlic for 3–4 minutes until softened.
  2. Transfer vegetables to a slow cooker along with lentils, potatoes, cumin, paprika, salt, pepper, and vegetable broth. Stir well.
  3. Cover and cook on LOW for 7–8 hours or HIGH for 3–4 hours, until lentils and potatoes are tender.
  4. Stir in the greens during the last 15 minutes of cooking to wilt.
  5. Adjust seasoning and add lemon juice if desired before serving.
