Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 lemon, zest and juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Grease the slow cooker with a little olive oil or cooking spray.
  2. Place rice in the bottom of the slow cooker and pour in chicken broth.
  3. Season chicken breasts with garlic powder, thyme, rosemary, salt, and pepper. Place on top of the rice.
  4. Drizzle olive oil and lemon juice over the chicken, then sprinkle lemon zest on top.
  5. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours until chicken is cooked through and rice is tender.
  6. Garnish with fresh parsley before serving. Serve warm and enjoy!
