Ingredients

- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 lemon, zest and juice
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Grease the slow cooker with a little olive oil or cooking spray.
- Place rice in the bottom of the slow cooker and pour in chicken broth.
- Season chicken breasts with garlic powder, thyme, rosemary, salt, and pepper. Place on top of the rice.
- Drizzle olive oil and lemon juice over the chicken, then sprinkle lemon zest on top.
- Cover and cook on LOW for 4β5 hours or HIGH for 2β3 hours until chicken is cooked through and rice is tender.
- Garnish with fresh parsley before serving. Serve warm and enjoy!
