- 1 1/2 lb boneless, skinless chicken breasts or thighs
- 1 cup long-grain white rice, uncooked
- 2 1/2 cups chicken broth
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Juice and zest of 1 lemon
- 1 cup frozen peas or green beans (optional)
- Salt and pepper, to taste
- Optional garnish: fresh parsley or lemon slices

- Spray the inside of a 6-quart slow cooker with cooking spray.
- Place chicken in the bottom of the crockpot.
- Add rice, chicken broth, olive oil, garlic, thyme, rosemary, lemon juice, and lemon zest. Stir gently to combine.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is cooked through and rice is tender.
- Remove chicken and cut or shred into bite-sized pieces, then return to the crockpot.
- Stir in frozen peas or green beans if using, and cook an additional 5–10 minutes.
- Season with salt and pepper to taste and garnish with fresh parsley or lemon slices before serving.
Notes
For more flavor, sear the chicken in a skillet before adding to the slow cooker. Adjust lemon juice to taste for a brighter or milder flavor. Leftovers keep well in the fridge for 2–3 days.
