- 1 1/2 lb boneless, skinless chicken breasts or thighs
- 1 lb baby potatoes, halved
- 2 cups broccoli florets
- 1 cup carrots, sliced
- 4 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt and black pepper, to taste
- Optional: fresh parsley, chopped

- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
- In a small bowl, mix melted butter and minced garlic.
- Place chicken on the baking sheet and drizzle with half of the garlic butter.
- Add potatoes, broccoli, and carrots. Drizzle with olive oil and remaining garlic butter.
- Season everything with Italian seasoning, paprika, salt, and pepper. Toss vegetables gently to coat.
- Bake for 35–40 minutes, flipping chicken halfway through, until chicken reaches 165°F (74°C) and vegetables are tender.
- Remove from oven and garnish with fresh parsley if desired.
- Serve hot straight from the pan.
Notes
For extra flavor, add a squeeze of fresh lemon juice before serving. You can swap vegetables with green beans, zucchini, or bell peppers depending on what you have on hand.
