- 1 1/2 lb boneless, skinless chicken breasts or thighs
- 2 cups mixed vegetables (broccoli, bell peppers, carrots, zucchini, etc.)
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried thyme or rosemary
- Salt and black pepper, to taste
- Optional: lemon wedges for serving

- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
- In a large bowl, toss chicken and vegetables with olive oil, garlic powder, paprika, thyme, salt, and pepper.
- Spread chicken and vegetables in a single layer on the prepared sheet pan.
- Roast 25–30 minutes, stirring halfway through, until chicken reaches 165°F (74°C) and vegetables are tender.
- Remove from oven and let rest 5 minutes before serving.
- Serve warm with optional lemon wedges.
Notes
You can swap vegetables based on season or preference. For extra flavor, add a drizzle of balsamic glaze or sprinkle grated Parmesan over the top before serving.
