- 2 large chicken breasts, sliced into strips
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp dried oregano
- Salt and black pepper, to taste
- 4 pita breads
- Optional toppings: lettuce, diced tomatoes, cucumber, feta cheese, tzatziki sauce

- Preheat oven: Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
- Season chicken and veggies: In a large bowl, toss chicken strips, bell peppers, and onion with olive oil, garlic, paprika, cumin, oregano, salt, and pepper.
- Roast: Spread the mixture evenly on the prepared sheet pan. Roast for 20–25 minutes until the chicken is cooked through and vegetables are tender.
- Warm pita bread: Heat pita breads briefly in the oven or a skillet until warm.
- Assemble pitas: Fill each pita with roasted chicken and vegetables. Add lettuce, tomatoes, cucumber, feta cheese, and tzatziki sauce if desired.
- Serve: Serve immediately while warm.
Notes
You can add zucchini or mushrooms to the sheet pan for extra vegetables. For more flavor, squeeze fresh lemon juice over the chicken before serving. Leftovers can be stored in the refrigerator for up to 3 days.
